Traditional Method

To ensure the highest quality and authenticity, we adopt a method that faithfully reflects traditional practices. We use natural whey graft and allow our dairy cheese time to rest properly, allowing it to ripen for more than 4 hours before spinning. This ripening process allows the flavors to fully develop, giving our mozzarella a rich and authentic taste.

Selection of Raw Materials

In our products, we favor the use of simple, wholesome ingredients. Fresh, high-quality cow’s milk is carefully selected to ensure the best base for our Fior di Latte. In addition, we use microbiologically pure spring water, which undergoes more than 300 weekly checks to ensure maximum safety and purity. This approach allows us to offer a distinctive, high-quality product while respecting our artisanal heritage and the nature of our ingredients.

Slow Maturation Method

Our slow ripening method requires extremely careful and patient processing, developing complex flavors and a smooth, creamy texture. This process, with a period of 14-15 hours, brings Fior di Latte to its culinary perfection, ideal for preparations such as pizza. By ensuring that the product does not burn during cooking and melts with a creamy texture, it provides an exceptional culinary experience.
