Pasta alla Norma with Mozzarella di Bufala Campana DOP

Pasta alla Norma is a classic of Sicilian cuisine, and with the addition of Mozzarella di Bufala Campana DOP, the dish reaches new levels of goodness. Also perfect with Fior di Latte or Smoked Provola, this first course will win everyone’s palate.

PREPARATION

Preparing Eggplant

Cut eggplant into cubes and fry in hot oil until golden brown. Drain them on paper towels and add salt to taste.

Preparing the Sauce

In a skillet, sauté garlic in extra virgin olive oil. Add tomato puree and simmer for 15 minutes. Season with salt and pepper.

Cook the Pasta

Cook the pasta in plenty of salted water. Drain when al dente and combine with the tomato sauce.

Assembling the Dish

Add fried eggplant and mix well. Top with pieces of Mozzarella di Bufala Campana DOP and fresh basil leaves.

Serve

Serve the pasta hot, letting the mozzarella melt slightly for a stringy and delicious result.

  • 200g Mozzarella di Bufala Campana DOP
  • 2 medium eggplants
  • 400g of tomato puree
  • 1 clove of garlic
  • Fresh basil to taste.
  • Extra virgin olive oil q.b.
  • Salt and pepper to taste.
  • Frying oil
