Sori’ – Franco Pepe: Two protagonists, one territory.
Two excellences from Campania will be together in Milan, on the occasion of the TuttoFood International Exhibition: Sorì, dairy producers from Alto Casertano since 1868, and pizza artisan Franco Pepe, “Best Pizzaiolo in the World” at The Best Chef Awards 2021, who has received countless awards over the years and is now unequivocally considered the most famous pizza maker in the world.
Two protagonists, a single territory: the one close to the Roccamonfina Regional Park. An area of great landscape value which, thanks to its environmental characteristics, is a source of raw materials of the highest quality and for which we can borrow the concept of terroir.
Not only the environment, soil and subsoil, therefore, but also ideal climatic conditions and the human factor, understood as history, tradition and culture, contribute to the production of excellent products.
The collaboration between Sorì and Franco Pepe involves the creation of pizzas made exclusively with Fior di Latte Appennino Campano.
Likewise, the brothers Antonello and Gaetano Sorrentino of Sorì, a company that is one of the leaders in dairy production in Campania, with exports to more than 50 countries around the world, use, for their artisanal processes, spring water that gushes microbiologically pure from the slopes of the extinct volcano of Roccamonfina and raw materials that are subjected to more than 300 quality controls a week; Franco Pepe, a pizza artisan who has always been a convinced supporter of health at the table, tirelessly searches for local products of excellence, involving local companies and producers.
