Mozzarella in a Carriage

Mozzarella in Carrozza is a classic Italian appetizer, particularly popular in southern Italy. These tasty mozzarella sandwiches, fried until golden and crispy, are perfect for a casual dinner or as an appetizer during an aperitivo. The combination of stringy mozzarella and crispy bread is irresistible!

PREPARATION

Preparing Mozzarella di bufala campana DOP

Drain the mozzarella di bufala campana DOP well and pat dry with paper towels to remove excess moisture.
Cut the mozzarella into slices about 1 cm thick.

Assemble the Sandwiches

Arrange 4 slices of bread on a flat surface. Lay mozzarella slices on 4 of these bread slices and cover with the remaining 4 bread slices, thus creating 4 sandwiches.

Preparing the Breadcrumbs

Prepare three plates: one with the flour, one with the beaten eggs (mixed with the 2 tablespoons of milk), and one with the breadcrumbs.
Dip each sandwich first in the flour, making sure it is well covered.
Then dip it into the egg mixture, letting it absorb evenly.
Finally, top with the breadcrumbs, pressing lightly to make it stick well.

Frying Sandwiches

Heat plenty of seed oil in a skillet over medium-high heat.
When the oil is hot (about 170°C), fry the sandwiches, a few at a time, until golden and crispy, about 2 to 3 minutes per side.
Drain the sandwiches on paper towels to remove excess oil.

Serve

Serve the mozzarella in carrozza hot, garnished with sprigs of fresh parsley if desired.

  • 8 slices of boxed bread (preferably without crusts)
  • 250g mozzarella di bufala campana DOP (or Fior di latte or smoked provola)
  • 2 eggs
  • 100g flour
  • 100g of breadcrumbs
  • 2 tablespoons of milk
  • Salt and pepper to taste.
  • Seed oil for frying
  • Sprigs of fresh parsley (for garnish, optional)
